<span class="text_exposed_show" style="display: inline;"><br />Ingredients:<br /><br />Sauce:<br /><br />1/2 cup orange juice<br />2 tablespoons soy sauce<br />2 tablespoons rice vinegar<br />1 tablespoon oyster sauce<br />1 tablespoon orange zest<br />2 large cloves garlic<br />1 teaspoon minced ginger<br />optional sweetener like sugar, honey, agave, etc.<br />Stir-fry:<br /><br />1 pound chicken tender (I used boneless breasts) cut into cubes<br />salt and pepper<br />3 tablespoons corn starch<br />4 cups chopped vegetables such as broccoli, carrots, celery, mushroom, snap peas, etc.<br />olive oil<br />1/2 cup medium yellow onion, chopped<br />Instructions<br /><br />Blend all the ingredients for the sauce in a blender or food processor for 10 seconds.<br />Taste the sauce and add your choice of sweetener to your liking.<br />Blend again for a few more seconds.<br />Heat the sauce in a large skillet on medium-high heat for 5 minutes. Carefully transfer the sauce to a heat proof bowl.<br />Rinse the skillet clean.<br />Season the chicken with salt and pepper.<br />Add the corn starch and massage the chicken with your hands.<br />If using fresh broccoli or green beans, boil the broccoli for 3-5 minutes until soft enough to pierce with a fork yet firm.<br />Transfer the vegetables to a plate lined with a paper towel.<br />Wipe down the skillet until dry.<br />Heat approximately 1 tablespoon of oil in the skillet on medium-high heat.<br />Cook the onion and chicken until the chicken is cooked through, approximately 3-4 minutes.<br />Add the remaining vegetables and stir-fry them together for 2 minutes.<br />Slowly add a few tablespoons of sauce while stirring the vegetables and chicken.<br />Continue to add the sauce a few tablespoons at a time, allowing about 15 seconds between each addition to allow sauce to slightly cook down.<br />Spoon the stir-fry over a bowl of hot rice. Serve immediately.</span></div>

I did a few modifications in the amounts, and omitted the green onions, because I didn't have any. It was a big hit!

Taco Salad Bake<br />

1lb. ground beef
1 can spicy chili beans, undrained<br />
1 can corn, drained<br />
1 cup salsa<br />
1 pkg. Taco seasoning {I used McCormick’s}<br />
2 cups crushed tortilla chips {I used Santita’s}<br />
1/4 cup green onions chopped<br />
1 medium tomato, chopped<br />
2 cups shredded cheese<br />
1 large avocado, peeled and cubed<br />
Shredded lettuce<br />

Brown your ground beef, drain, and add in the corn, chili beans, corn, taco seasoning and salsa.
While that heats to a boil, crush up your tortilla chips and place in the bottom of a deep casserole dish.
Dice your tomatoes, avocado and chop your green onions.
When your meat mixture is boiling, pour on top of the crushed chips, layer the tomato, onion and top with shredded cheese. (I used Mexican cheese with seasonings in it.)
Bake at 350 degrees for 30 minutes.
When it's done you can top with your shredded lettuce, avocado and any other toppings that you desire.

I saw a picture of bacon filled pancakes and knew I had to make them for the family. Add broccoli, carrots and celery. Boil for 2-3 minutes. (I chop my broccoli very finely, so there are not large pieces in the soup). Drain. Set veggies aside. In the same kettle, saute onion in butter until tender. Stir in flour to form a smooth paste. Gradually add the broth and milk, stirring constantly. Bring to a boil and stir for one minute. Add veggies. Stir in parsley, onion salt, garlic powder, salt and thyme. Reduce heat, cover and simmer for 30-40 minutes until the veggies are tender and flavors combined. Add onions and a pinch of sea salt. Saute until golden. Add carrots, celery and 1/4 teaspoon salt. Saute three minutes, add garlic, thyme, sage, oregano and rosemary. Saute two minutes. Add 1/4 cup chicken stock. Allow liquid to evaporate. Add six cups more stock and beans (drained and rinsed). Simmer twenty minutes ~ add more stock if necessary. You may need a squeeze of lemon juice or a pinch of salt for taste.<br />Serve with a sprinkle of Parmesan cheese. Then begin layer your ravioli (Frozen!), sauce, mozzarella cheese. Do two to three layers and then cover with foil. If you are looking for a healthier option once in a while, give these a try. They are baked, not fried. (You may add 1/2 teaspoon cayenne pepper to them.) Add 2 tblsp. flour. Place into a shallow dish.<br />Add the salt to the buttermilk in another shallow bowl or dish.<br />Place your onion rings into the ziploc bag with 1/2 cup flour and shake to coat. Now, dip each onion into the buttermilk mixture first, then the crushed chips.<br />Place them in a single layer on a greased baking sheet. I decided to whip up my own pasta sauce this evening, and was absolutely thrilled with the results! Even my eleven year old loved it! The best part . . . . I think it may have taken about 15 minutes from start to finish. You can't go wrong with that, either!<br /><br />I started by sauteing about a couple of teaspoons of garlic in olive oil. Then I cubed some small roma tomatoes, and tossed them in with some sweet yellow peppers, (diced) and some vidalia onions. Saute for five or ten minutes, then add some fresh basil. Salt and pepper to your liking. I served over some multi-grain pasta. One the side, I served a salad of spring mix, feta and vidalias, with my favorite Greek dressing.
