Broccoli and Cheese Stuffed Chicken Breasts

Made these a couple of nights ago, and everyone seemed to like them. They were very quick and easy! I pretty much added as I went, without specific measurements, but if anyone is interest, let me know and I will try to give somewhat of a recipe description!

    I pounded out some boneless, skinless chicken breasts until they were the same thickness.

    I boiled some broccoli and then chopped it fine, added 1/2 a stick of cream cheese and about a cup of shredded mozzarella, and mixed it all together well. Put a dash of salt and pepper.

    Take a spoonful of the mixture and place on each pounded piece of chicken.

    Crush up some ritz crackers. Beat an egg in a bowl. Roll each filled chicken breast in the egg, then roll in the cracker crumbs.

    Place on a greased baking sheet (seam side down) and bake for approximately 45 minutes at 350 degrees. Check to be sure chicken is cooked through:) Enjoy!
